My dad loves turkey. Full on, no holds barred – LOVES it. Every Thanksgiving and Christmas, he searches out the largest possible bird that will still fit in his oven. After the celebration has died down, he goes back the following week to pick up the discount turkeys to throw another one in freezer just in case. You never really know when he’s going to whip the next turkey out of the freezer.
After each occasion is finished, he carefully puts aside all of the morsels from the turkey. He piles platters high in the refrigerator for a little turkey sandwich (with gravy, and maybe even stuffing) the next day. He puts the turkey carcass in a pot and fills it with water, and makes this soup. It slowly simmers overnight on the stove and we wake up the next morning to the turkey smell filling the house once again.
So now when I make my own turkeys (albeit much smaller in size), I carefully savour every last morsels as well. The great part about this soup is it freezes really well, and it’s a warm hug on those cold fall days. I usually save mine for when I come down with a cold because it feels like love in a bowl to me.
A simple turkey soup to help you use up turkey leftovers!

Ingredients
Broth
1turkey carcass
6cupsof water
3carrots
4celery stalks
1medium onion
Soup
1.5 - 2cupsof turkey meat
3carrots
4celery stalks
1med onion
1cupof mini potatoesor potatoes in 1/2" chunks
Instructions
In a large saucepan, combine turkey carcass with 6 cups of water. Add carrots, celery and onion and let simmer for at least 1 hour. Best results if you let it simmer for a few hours on low until all the meat is falling off the bones.
Strain liquid and reserve. Pick out any meat remaining after it cools and reserve.
Pour broth into pot and add turkey meat, additional carrot, onion, celery and potatoes. Let simmer on low for an hour, and serve.
