Kale Salad with Cranberries
Although the school year is winding down for us, the farm is in full swing. We’re planting rows on rows of veggies that will become the staples of our food until next season, and what we share with our Farm Share members. During this busy planting, weeding and tending time, my family is busy with commitments from baseball to birthdays. In Alberta, summer also means longer days, so we frequently have a second shift after our dinner to tend the farm. Busy is an understatement.
Meals become simple affairs – with many sandwiches and lots of shortcuts. In a lot of ways, it feels counter intuitive that we are growing so many vegetables to eat farm to table when we can’t even manage to get around the table. We need good fuel for our bodies that we are asking so much of. Recently, we discovered more selection from Eat Smart’s delicious and nutrient packed superfood salads to help us power up and keep going on our never-ending to-do list.

How To Make a Quick Kale Salad with Cranberries
This superfood Sweet Kale mix has been a favourite of mine for some time. I frequently pick it up from my local No Frills store. This simple recipe is great for an evening meal with a little rice on the side, or you could make it as a side dish for your main meal. It contains 7 different superfoods – kale, green cabbage, broccoli, Brussels sprouts, chicory, roasted pumpkin seeds and dried cranberries.
Kale Salad with Cranberries
Ingredients
- 1 package Eat Smart's Sweet Kale Vegetable Salad Mix
- 1/4 cup chives, chopped
- 1/4 cup dill, chopped
- 1 avocado
- 2 chicken breast, grilled
- 1/2 cup dried cranberries
Instructions

Toss salad into bowl & add salad dressing and nut mix from interior.

Chop avocado, chicken breast and add to salad.

Add chives, dill and additional dried cranberries.

Serve & enjoy.
