S'mores Cookie Bars

  • 1/2 cup butter or margarine softened
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/3 cup all-purpose flour
  • 3/4 cup graham cracker crumbs
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/3 cups mini milk chocolate bars or 5 1.55 oz full size bars
  • 3 cups mini marshmallows


  1. Heat oven to 350°F, and grease an 8" square baking pan

For crust

  1. Beat butter and sugar until blended
  2. Add egg and vanilla, beat well
  3. Mix together flour, graham cracker crumbs, baking powder, and salt. Add to butter mixture, beat until blended.
  4. Press HALF of dough into prepared pan. Bake 15 minutes

For topping

  1. Remove crust from oven.
  2. Sprinkle on mini chocolate bars, or cover with full size, breaking to fit as needed.
  3. Spread marshmallows on top, and then break up remaining dough and drop across top of marshmallows.
  4. Bake 10 to 15 minutes - until lightly browned
  5. Cool completely in pan on wire rack. Cut into bars.

Recipe Notes

These freeze well; cut first and layer with wax paper in container before freezing
