Greek Salad


Servings 4 750 mL jars

Ingredients

Dressing

  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp lemon juice
  • 2 cloves garlic minced
  • 1/2 tbsp dried oregano leaves
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Salad

  • 2 tomatoes chopped
  • 1/2 english cucumber chopped
  • 1 bell pepper chopped
  • 1/2 cup feta cheese crumbled
  • 3/4 cup black olives
  • romaine lettuce

Instructions

  1. Make the dressing. Let stand for a half hour.

  2. Chop up tomatoes, cucumber, peppers in large pieces

  3. Pour dressing over chopped vegetables & olives, mix together. 

  4. Divide mixture evenly between 4 750mL wide mouth mason jars

  5. Fill remainder of jar with chopped romaine lettuce, and sprinkle feta cheese on top

  6. When ready to eat, simple shake up jar to mix, then enjoy!
