Dairy-Free Shamrock Shake

An easy, thick and delicious minty shake for St. Patricks Day.
Prep Time 10 minutes


  • 500 ml Vanilla Coconut Ice Cream
  • 2/3 cup Coconut milk
  • 1/2 tsp Peppermint Extract
  • 18 drops Green Food Colouring
  • Optional: coconut whipped topping to taste


  1. Let the coconut ice cream soften slightly on the counter - 5 minutes.
  2. Shake the coconut milk in the can before opening.
  3. Blend ice cream and coconut milk until combined (if it won't mix, let the ice cream soften more).
  4. Add peppermint extract and food colouring.
  5. Blend to combine.
  6. Pour into serving glasses.
  7. Add topping if desired.
  8. Serve immediately.
