My Holiday Nemesis: Gingerbread
We are winding down with only a few more things left to do before Christmas. I get into this mode I call holiday exhausted where I just want to grab a bowl of popcorn, sit down and watch some Netflix and unwind. But there’s still more to do, so I’m not quite there yet.
One of my holiday nemesis continues to be a gingerbread house. My husband and I always seem to want one to decorate, and the results using various kits and trying to make our own continue to be disastrous. Last year, we couldn’t get the icing to set right. This year, the playschool Mr J goes to made “cookie man” (read: gingerbread men) which of course meant that his sister didn’t get on. She begged me to make “cookie mans” at home, and I couldn’t resist.
The gingerbread smelled amazing, but when we rolled it out it was not as elastic as I thought dough would be. It was not bad, and we did decorate cookie people, but they were not as delicious as expected. It went stale incredible fast, and was too flakey for cookies. Sometimes a recipe just needs something extra that you don’t know about it – and sometimes it doesn’t work on the first try…..
We did end up making a gingerbread house though – from a kit. Oh well, you can’t DIY them all.
