Homemade Turkey Soup

A simple turkey soup to help you use up turkey leftovers!

Ingredients

Broth

  • 1 turkey carcass
  • 6 cups of water
  • 3 carrots
  • 4 celery stalks
  • 1 medium onion

Soup

  • 1.5 - 2 cups of turkey meat
  • 3 carrots
  • 4 celery stalks
  • 1 med onion
  • 1 cup of mini potatoes or potatoes in 1/2" chunks

Instructions

  1. In a large saucepan, combine turkey carcass with 6 cups of water. Add carrots, celery and onion and let simmer for at least 1 hour. Best results if you let it simmer for a few hours on low until all the meat is falling off the bones.
  2. Strain liquid and reserve. Pick out any meat remaining after it cools and reserve.
  3. Pour broth into pot and add turkey meat, additional carrot, onion, celery and potatoes. Let simmer on low for an hour, and serve.

Recipe Notes

Pairs well with a fresh baguette or crackers for a filling meal.
